Questions to ask yourself.
Do you have pain in your arms after playing/practicing?
Do you hit your irons considerably shorter than your playing partners?
Do you have difficulty getting your 3 iron airborne?
If you can answer yes to any of these then you can consider graphite iron shafts. Otherwise, you will be fine with steel.
Now, stiff or regular. Judging by the 3w distances you stated, you will probably be recommended to get stiff. BUT, the best thing to do is go to the golf shop and ask to demo a 5 iron in Stiff and Regular steel. Hit a bucket of range balls, first half with the R flex and second half with the S. Concentrate on the feel of the clubhead through impact. Does it feel in control? Does the regular shaft feel too whippy? Do you feel you have more control with the stiff flex? Afterwards, you will know which to go with.
