After discussing this matter with two CPGA Pros here is what I was told.

Soft sand you want a 56-58 * wedge with a higher bounce. 12-14 degrees of bounce so the flange of the clubhead slides through the sand.

Firmer sand, less bounce on the wedge. Again 56-58 degrees loft.

Personally I would stick to a 56 or 58 degree SW and then decide what bounce you need according to the sand you play out of.

Remember, a higher degree of bounce on a SW makes it tougher to hit off fairways. You need to stay around 8 degrees bounce for fairway shots. I know all about this. I was using a 56 degree wedge with 8 degrees of bounce for sand and fairway shots. I played out of firm sand at the time.
Then I started playing a course that has soft sand, so I went to a new Vokey SM with 56 degrees loft and 10 degrees bounce. Great out of the sand but I just can not hit fairway shots like I used to be able to with the other wedge.
So now I will maybe have to carry a 56-8 and a 58-12. If that is the case I will have to drop a lower lofted club from my bag. Or stay out of the sand
